How many movies/series do you plan to stream at once from that one Plex or Jellyfin server?
I only stream locally and there's only one stream playing: I run that from a CPU that is 10 years old, a Xeon 2680 v4, from a VM that has only got a few cores and maybe 16 GB of RAM and that's it. Now, OK, it's an Intel CPU. But it's also 10 years old. And you can buy one for, what, $10 on eBay (just the CPU: a complete used Xeon server from 10 years ago shall set you back $200 or so).
